Breve preparation

  1. Pull a double espresso (36g) into a 240ml cup.
  2. Steam 150ml of half-and-half to 55-60°C - lower than you would take milk, it scorches easily.
  3. Aerate only briefly; the extra fat builds foam fast and over-thickens if you stretch it.
  4. Pour to combine, leaving about 1cm of dense foam on top.

Half-and-half carries roughly three times the fat of whole milk, so the cup is rich and the foam short-lived. Serve it straight away.
