Moka Pot technique

  1. Fill the base with hot water to just below the safety valve.
  2. Fill the basket with medium-fine coffee, levelled but not tamped.
  3. Assemble and set on medium-low heat with the lid open.
  4. Pull it off the heat when the pour turns blonde and gurgles; cool the base under a tap.
  5. Serve straight or as the base for a stovetop latte.

Starting with hot water keeps the grounds from stewing on the way up. Keep the heat moderate - a sputtering brew turns bitter fast.
