Cappuccino

A double espresso with steamed milk and a thick crown of foam, traditionally about a third each. Mornings only, in Italy.

Cappuccino preparation

  1. Pull a double espresso into a 5-6oz cup.
  2. Steam 120ml of milk with more aeration than a latte for a deeper foam.
  3. Build roughly equal parts espresso, steamed milk and foam.
  4. Pour to leave a domed cap of foam on top.

The traditional cappuccino is a balanced third-third-third drink. The foam should be fine and integrated, never stiff and dry.
