Chemex technique

  1. Use 30g of medium-coarse coffee in a rinsed Chemex bonded filter.
  2. Heat 500g of water to 93-95C.
  3. Bloom with 60g of water for 45 seconds.
  4. Pour in slow spirals to 300g, then to 500g, keeping the bed level.
  5. Total brew should land around 4:00 to 4:30.

The thick Chemex filter removes more oils and fines than a V60 for a very clean, tea-like cup. Grind a touch coarser to avoid a slow, bitter draw.
