Colada preparation
- Brew 150-180ml of strong moka-pot or espresso coffee - four to six cafecito shots' worth.
- Beat the first 10ml with 4-5 tsp of sugar into a thick espuma in the serving cup.
- Add the rest of the coffee, stir once, and cap the cup.
- Serve with a stack of 40ml thimble cups and hand them round.
A colada is a serving format, not a different drink - it is cafecito for four. Drinking one alone is roughly 320mg of caffeine, most of a sensible daily limit.
