Cortado preparation
- Pull a double espresso (36g out) directly into a 4oz Gibraltar glass.
- Steam 60ml of milk to 60–65°C with minimal microfoam - silky, not airy.
- Pour milk in a steady stream to fill the glass evenly.
- Aim for a 1:1 ratio of espresso to milk.
The cortado is built around restraint. Less milk than a flat white, no foam to speak of, the espresso meant to read clearly through the milk.
