Freddo Cappuccino preparation
- Whip a double espresso (36g) with 4-5 ice cubes for 20-30 seconds, then strain over fresh ice in a 300ml glass.
- Pour 100ml of cold whole milk into a tall jug and froth it cold for 30-45 seconds until it doubles.
- Spoon the cold foam over the coffee in a 3-4cm layer.
- Serve with a straw and no stirring.
The milk is never heated - cold-frothed afrogala holds a stiffer, colder foam. Full-fat milk froths best; skimmed gives volume that collapses.
