Gibraltar preparation
- Pull a double espresso (18g in, 36g out) straight into a 4.5oz Gibraltar glass.
- Steam 70ml of milk to 60°C with almost no air - glossy and pourable, no visible bubbles.
- Pour to fill the glass, landing around 1:2 espresso to milk.
- Drink it inside two minutes; thin glass loses heat fast.
Functionally a cortado with a San Francisco name - the Libbey glass gave it the title. A touch more milk than the Spanish original, still coffee-forward.
