Caffeine is a reference value for this drink and brew method, not a measurement of your cup.

Latte preparation

  1. Pull a double espresso (36g out) into a 6-8oz cup.
  2. Steam 250-300ml of cold milk to 60-65C with a thin layer of microfoam.
  3. Swirl the pitcher until the milk is glossy and paint-like.
  4. Pour from height to combine, then drop close to the surface to float art.
  5. Aim for roughly a 1:5 espresso-to-milk ratio.

A latte is mostly textured milk, so steaming is where it is won or lost. Stretch the milk only briefly, then submerge the wand to roll it into silky microfoam.
