Latte Macchiato preparation
- Steam 200ml of milk to 60-65°C with slightly more air than a latte - you want about 2cm of foam.
- Pour the milk into a tall 300ml glass and let it stand 30 seconds so foam and liquid separate.
- Pull a single espresso (9g in, 18g out) and pour it slowly through the centre of the foam.
- Serve unstirred so the three layers stay visible.
Milk first, coffee second - the reverse of a latte, and the reason the milk is the thing being marked. A double shot buries the layering.
