Turin's small glass - cocoa dusted inside, espresso, more cocoa, a cap of milk foam. Three sips, and the layers are the point.

Marocchino preparation
- Dust the inside of a small 90ml glass with cocoa powder.
- Pull a single espresso (9g in, 18g out) into the glass.
- Dust a second layer of cocoa over the crema.
- Top with 30-40ml of dense milk foam, spooned rather than poured.
- Finish with a last dusting of cocoa.
Turin serves it in glass so you can see the layers. Some bars line the glass with melted chocolate instead of cocoa - richer, and much closer to a small mocha.
