Shakerato preparation
- Chill a 150ml coupe in the freezer for 10 minutes.
- Pull a double espresso (36g) into a cocktail shaker with 1-2 tsp of sugar and stir to dissolve.
- Fill the shaker with ice and shake hard for 10-15 seconds, until the tin frosts.
- Strain into the chilled glass - no ice in the drink - and serve with the foam standing.
Sugar is what holds the foam; a sugar-free shakerato foams thinly and dies fast. Never let it stand in the shaker or the ice waters it down.
