Instant Coffee preparation

  1. Use 2g of instant coffee - a level teaspoon - per 200ml of water.
  2. Heat the water to 90°C, not boiling; boiling water scorches the solids and adds a burnt edge.
  3. Add a splash of water first, stir to a paste, then top up so it dissolves evenly.

Freeze-dried granules beat spray-dried powder every time. Two grams to 200ml is the honest ratio - most people use double that and then blame the coffee.
