Vacuum brewing: steam pressure pushes water up, the coffee steeps by immersion, then the vacuum pulls it back through a cloth filter. Clean and full-bodied at once.

Siphon technique
- Fill the lower globe with 300g of water at 90°C to save heating time, and seat the wet cloth filter in the upper chamber.
- Bring the water up with the burner until it has fully risen, then add 20g of medium-ground coffee.
- Stir gently to submerge the grounds and steep for 60 seconds.
- Stir once more, remove the heat, and let the vacuum draw the brew down over 30-40 seconds.
- Serve straight from the lower globe.
Keep the cloth filter wet in water in the fridge - a dried-out one tastes of old coffee. Two short stirs are plenty; over-agitation muddies a brew whose whole selling point is clarity.
