Kopi Susu preparation
- Add 25g of finely ground dark-roast robusta to a cloth sock filter.
- Pour 200ml of water at 95°C through slowly, then pour the coffee back through the sock twice more to build body.
- Spoon 30ml of sweetened condensed milk into a glass.
- Add the hot coffee and stir - or pour it over a full glass of ice for es kopi susu.
The repeat pours are traditional and give the syrupy body the condensed milk needs to sit against. A fine-mesh filter is a workable stand-in for the sock.
