Nitro Cold Brew technique
- Start from cold brew made at 1:8 - 125g of coffee to 1L of water - steeped 16 hours and filtered clean.
- Do not dilute; nitrogen flattens perceived strength and sweetness.
- Charge a 1L cream whipper with a nitrogen (N2) cartridge, not N2O, or run a keg at 30-40 psi on beer gas.
- Chill to 3-4°C and leave it under pressure for 12 hours before serving.
- Pour hard into a chilled glass with no ice and let the cascade settle for 30 seconds.
Nitrogen is barely soluble, which is exactly why the pour cascades and the head holds. Ice is the enemy of a drink built on texture.
